Once there, we ventured into the Amazon rainforest to a small indigenous community called <strong>Santa Rita<\/strong>. It&#8217;s here that Ecuador&#8217;s famous &#8220;<strong>Arriba Nacional<\/strong>&#8221; grows, said to be the world&#8217;s finest cacao!<\/p>\n<h3><span style=\"text-align: justify;\">Want to\u00a0<\/span><strong style=\"text-align: justify;\">make chocolate<\/strong><span style=\"text-align: justify;\">\u00a0yourself? Here\u2019s how to go about it&#8230;<\/span><\/h3>\n<p style=\"text-align: justify;\"><strong>1)<\/strong> First, get yourself over to the <strong>Equator<\/strong> \u2013 because cacao only grows near there, where the trees get all the warmth, shade and humidity they require.<\/p>\n<p><a href=\"http:\/\/www.natgeokids.com\/wp-content\/uploads\/2014\/08\/Map-3.5.jpg\"><img decoding=\"async\" class=\"size-full wp-image-5007 aligncenter\" src=\"http:\/\/www.natgeokids.com\/wp-content\/uploads\/2014\/08\/Map-3.5.jpg\" alt=\"cacao map\" width=\"635\" height=\"128\" srcset=\"https:\/\/cdn.creatureandcoagency.com\/uploads\/2014\/08\/Map-3.5.jpg 635w, https:\/\/cdn.creatureandcoagency.com\/uploads\/2014\/08\/Map-3.5-300x60.jpg 300w\" sizes=\"(max-width: 635px) 100vw, 635px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\"><strong>2)<\/strong> Wait six months for the cacao pods to ripen, then gather your family together to harvest them! Because cacao pods in your <strong>chacra<\/strong> (an area a bit like a large orchard) will have different colours, the best way to find out whether they\u2019re ripe is to tap the pods. If it has a <strong>deep<\/strong>, <strong>hollow sound<\/strong>, it means the beans inside are ready!<\/p>\n<p><a href=\"http:\/\/www.natgeokids.com\/wp-content\/uploads\/2014\/08\/Cacao-pods-2.jpg\"><img decoding=\"async\" class=\"size-full wp-image-5005 aligncenter\" src=\"http:\/\/www.natgeokids.com\/wp-content\/uploads\/2014\/08\/Cacao-pods-2.jpg\" alt=\"cacao pods\" width=\"600\" height=\"358\" srcset=\"https:\/\/cdn.creatureandcoagency.com\/uploads\/2014\/08\/Cacao-pods-2.jpg 600w, https:\/\/cdn.creatureandcoagency.com\/uploads\/2014\/08\/Cacao-pods-2-300x179.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\"><strong>3)<\/strong> Place the beans and the yummy pulp into large <strong>wooden boxes<\/strong>, cover them and leave them to <strong>ferment for a week<\/strong>, changing boxes every couple of days to allow air inside to help the process. The pulp will turn to liquid and drain away.<\/p>\n<p><a href=\"http:\/\/www.natgeokids.com\/wp-content\/uploads\/2014\/08\/Collecting-Cacao-3.jpg\"><img decoding=\"async\" class=\"size-full wp-image-5006 aligncenter\" src=\"http:\/\/www.natgeokids.com\/wp-content\/uploads\/2014\/08\/Collecting-Cacao-3.jpg\" alt=\"cacao pods\" width=\"600\" height=\"377\" srcset=\"https:\/\/cdn.creatureandcoagency.com\/uploads\/2014\/08\/Collecting-Cacao-3.jpg 600w, https:\/\/cdn.creatureandcoagency.com\/uploads\/2014\/08\/Collecting-Cacao-3-300x189.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\"><strong>4)<\/strong> Next, lay the beans out on wooden boards and dry them for a week in the sun. Then, after the beans are dry, clean and check each one for quality <em>by hand<\/em>, binning any that may be mouldy.<\/p>\n<p><strong>5)<\/strong> Now roast the beans at 100\u00b0C for 40-90 minutes (the exact time and temperature depends on the beans). When they start to pop, they\u2019re ready. <strong>Roasting<\/strong> releases new flavours, but don\u2019t burn them!<\/p>\n<p><strong>6)<\/strong> Grind the insides of the beans (called <strong>nibs<\/strong>) into a mushy paste, called <strong>cocoa mass<\/strong> or liquor.<\/p>\n<p><strong>7)<\/strong> Blend with a bit of sugar and any flavours you\u2019d like and keep grinding it (called <strong>conching<\/strong>) for several hours until it\u2019s runny.<\/p>\n<p><a href=\"http:\/\/www.natgeokids.com\/wp-content\/uploads\/2014\/08\/Melted-chocolate-4.jpg\"><img decoding=\"async\" class=\"size-full wp-image-5008 aligncenter\" src=\"http:\/\/www.natgeokids.com\/wp-content\/uploads\/2014\/08\/Melted-chocolate-4.jpg\" alt=\"melted chocolate\" width=\"600\" height=\"352\" srcset=\"https:\/\/cdn.creatureandcoagency.com\/uploads\/2014\/08\/Melted-chocolate-4.jpg 600w, https:\/\/cdn.creatureandcoagency.com\/uploads\/2014\/08\/Melted-chocolate-4-300x176.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p><strong>8)<\/strong> Finally, pour the mixture into a mould and leave to set in the fridge for 15 minutes.
