How to make a rainbow wrap

Roll up a colourful, crunchy summer lunch!

Grab your favourite veggies and create a colourful rainbow wrap. You could even make it vegan!

What you’ll need…

  • – One carrot
  • – Half a yellow pepper
  • – Some cucumber
  • – Wholemeal wrap
  • – Cream cheese or hummus
  • – Baby spinach leaves
  • – Cooked beetroot, drained
  • – Herbs (optional)
  • – Grater

How to make a rainbow wrap

Step 1

Grate the carrot and slice up the pepper, cucumber and beetroot.

Step 2

A person spreads a white, creamy substance onto a flat tortilla with a knife on a yellow tablecloth, preparing the base for a colourful rainbow wrap. A tub of the spread sits beside the tortilla.

Spread cream cheese or hummus on your wrap, leaving a 2cm border around the edge.

TOP TIP!

Use vegan cream cheese or hummus to make your wrap 100% plant-based.

Step 3

Arrange the veggies in stripes down the middle of the wrap.

Step 4

Fold in the top and bottom ends of the wrap.

TOP TIP!

Experiment with different ingredients – you could try radishes, cabbage, red pepper, avocado and a sprinkling of pine nuts. Yum!

Fold one side of the wrap over the veggies and then carefully roll it up, tucking in the top and bottom as you go. Once rolled, slice on the diagonal. Then scoff!
